#1 Double, Double Pumpkin Trouble
#1 Double, Double Pumpkin Trouble
Pumpkin spice is all the rage, but you don’t have to limit yourself to coffee and baked goods. For this pumpkin drink, the stars of the show are two ounces of our top-rated Frio 6.0 Pilsner, 1.5 ounces of bourbon and a spoon of walnut liquor. This beertail is perfected with orange bitters and smoked pumpkin puree, which may seem intimidating, but with help from an expert, it’s all gourd.
Recipe
Ingredients:
- 2 ounces Frio 6.0 Pilsner
- 1 ½ ounces bourbon
- Bar spoon of walnut liqueur
- ½ ounce lemon juice
- Chili powder, to taste
- ½ ounce simple syrup
- 2 dashes orange bitters
- 2 heaping bar spoons of canned pumpkin puree
- 2 small wood chips (mesquite or apple)
- Orange for garnish
Directions:
- Smoke the puree: Start by setting up a station on a sheet pan. Coat the bottom of a rocks glass with the pumpkin puree. Torch the wood chips with a culinary torch, or the burner of your stove, until they begin smoking (blow out any flames, you’ll want your chips smoking not burning) and place them on the sheet pan. Then, place the glass upside down over the wood for 10-15 seconds to envelop the smoke.
- Combine the smoked pumpkin puree, a few ice cubes, and other ingredients (excluding the Pilsner) into a cocktail shaker. Shake, then strain over fresh ice in a 12-ounce glass.
- Top with the Frio 6.0 Pilsner and garnish with an orange, if desired.
