Beer Mac and Cheese Recipe

There is nothing better in the way of comfort food than good mac and cheese. The box mac and cheeses have their benefits, but they definitely don’t hold up to old-fashioned oven mac and cheese.
Perfectly cooked pasta, coated in creamy cheese sauce, baked to perfection -- what could be more delicious? Well… there is one way to make mac and cheese just a little bit better. How, you ask? Just add beer!
Adding in some beer to the cheese sauce is a simple way to add deeper flavors to the mac and cheese. Often, cheese sauce can come out bland and unexciting. Adding in a splash of beer helps to bring out the underlying sauce flavors, while also incorporating hops into your meal. Don’t worry, most of the alcohol is cooked out during boiling and baking, but the rich beer flavor remains.
How to Make Simple, Creamy Beer Mac and Cheese
Ingredients:
  • 1 pound elbow macaroni pasta
  • 1 garlic clove, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • Salt and pepper
  • ¾ cup FRIO beer
  • 2 cups milk
  • ¼ cup heavy cream
  • 2½ cups shredded cheddar cheese
  • 2 tablespoons grated parmesan cheese
  • 1 cup bread crumbs, optional
  • Chopped bacon, optional
  • Chives for garnish

Step 1 - Boil the macaroni. Use the instructions on the pasta box to make al dente macaroni.
Step 2 - Preheat oven to 375°.
Step 3 - Create the roux. Combine the butter and garlic in a pot on the stove. Mix until the butter is melted. Then, add in the flour and salt and pepper. Mix until thick. Then pour in the milk, beer, and cream.
Stir well, and let boil until slightly thickened.
Step 4 - Add in the cheese. Pour in both cheeses and slowly stir until melted.
Step 5 - Combine macaroni and cheese sauce. Pour in the drained macaroni pasta into the pot with the cheese sauce. Mix this well until the cheese sauce is evenly coating the pasta.
Step 6 - Bake. Transfer the mac and cheese to a buttered baking dish. Now is your chance to add on the bread crumbs if desired. Then, put the mac and cheese in the oven for 25-35 minutes or until the top has turned golden brown.
Step 7 - Serve! You can top the mac and cheese with chives and bacon, or just serve it plain.
Time: About 1 hour
Serves 6 people

This is a perfect, family-friendly comfort meal. Eat it as a side with chicken or pork chops, serve it with broccoli, string beans, or a simple salad, or just eat it on its own. With bacon and chives, this mac and cheese is a meal in itself.
